Turkish Shish Kebab (Şaşlık Kebabı)
Marinated cubes of beef or lamb, skewered and grilled over charcoal until charred outside and juicy inside — a timeless Turkish classic.

Ingredients
800 g cubed beef or lamb
1 onion, grated
3 tablespoons vegetable oil
2 tablespoons plain yogurt
1 teaspoon dried thyme
1 teaspoon red pepper flakes
1 teaspoon black pepper
1 teaspoon salt
2 garlic cloves, crushed
For garnish: tomatoes, peppers, onion wedges (for skewering)
Instructions
Cut the meat into generous cubes.
In a large bowl, mix the grated onion, yogurt, oil, garlic, and spices to make the marinade.
Knead the meat thoroughly with the marinade, cover, and refrigerate for at least 4 hours, preferably overnight.
Thread the marinated meat onto skewers, alternating with tomato, pepper, and onion pieces if desired.
Heat a charcoal grill or barbecue until very hot, turning the skewers frequently for even cooking.
Grill for about 12-15 minutes, until charred outside and still juicy inside.
Serve hot with lavash bread or rice pilaf alongside the grilled vegetables.
