Turkish Shish Kebab (Şaşlık Kebabı)

Marinated cubes of beef or lamb, skewered and grilled over charcoal until charred outside and juicy inside — a timeless Turkish classic.

Prep: 25 minutes (+ 4 hours marinating) | Cook: 15 minutes | Serves: 4 servings

Ingredients

  • 800 g cubed beef or lamb

  • 1 onion, grated

  • 3 tablespoons vegetable oil

  • 2 tablespoons plain yogurt

  • 1 teaspoon dried thyme

  • 1 teaspoon red pepper flakes

  • 1 teaspoon black pepper

  • 1 teaspoon salt

  • 2 garlic cloves, crushed

  • For garnish: tomatoes, peppers, onion wedges (for skewering)

Instructions

  1. Cut the meat into generous cubes.

  2. In a large bowl, mix the grated onion, yogurt, oil, garlic, and spices to make the marinade.

  3. Knead the meat thoroughly with the marinade, cover, and refrigerate for at least 4 hours, preferably overnight.

  4. Thread the marinated meat onto skewers, alternating with tomato, pepper, and onion pieces if desired.

  5. Heat a charcoal grill or barbecue until very hot, turning the skewers frequently for even cooking.

  6. Grill for about 12-15 minutes, until charred outside and still juicy inside.

  7. Serve hot with lavash bread or rice pilaf alongside the grilled vegetables.
